Layered Cured Beef (Cold Cut Style)
Instructions
Step 1: The Setup Preheat your oven to 300°F (150°C). Line the IRON TASTE Dutch Oven with plastic wrap or parchment paper (optional, for easier unmolding).
Step 2: The Insert Layer sliced cured beef, mustard, and sauerkraut in the pot. Repeat layers 3-4 times, pressing down firmly with a spoon after each layer. Top with a final layer of beef.
Step 3: The Braise Cover tightly with the lid. Place in the oven for 2.5 to 3 hours. The meat will cook in its own juices and the mustard, becoming incredibly tender.
- The Reveal: Use the spiral lid lifter to remove the lid. The meat should be soft and gelatinous.
Step 4: The Rest Let the pot cool to room temperature, then place it in the fridge for 4 hours (or overnight). The gelatin from the meat will set, holding the layers together.
- The Reveal: Invert the pot onto a cutting board. The pre-seasoned surface ensures it slides out effortlessly. Slice and serve.
