Goulash — The Soul Warmer
Prep Time: 15 minsCook Time: 2 hoursServings: 6 PeopleDifficulty: Medium

"You don't need to worry about hot spots or burning the sauce. The thick cast iron walls of the IRON TASTE Dutch Oven distribute heat evenly, allowing the beef to caramelize perfectly and the paprika to bloom without scorching. It's the 'Soul Warmer' that makes a cold evening feel like home."

Instructions

Step 1: The Setup Place the IRON TASTE Dutch Oven on the stove over medium-high heat. Add a small splash of oil (or just a knob of butter).

  • Iron Taste Tip: Because the pot is pre-seasoned and non-stick, you can brown the meat with minimal fat. The natural seasoning prevents the meat from sticking to the bottom.

Step 2: The Insert Add beef cubes. Sear until browned on all sides. Remove meat. In the same pot, sauté onions, garlic, and paprika until fragrant. Return the meat to the pot.

Step 3: The Simmer Add beef broth, red wine, carrot, and potato. Bring to a boil, then cover with the lid. Reduce heat to low (or move to a 325°F oven). Simmer for 1.5 to 2 hours until the beef is fork-tender.

  • The Reveal: Use the spiral lid lifter to check the consistency. The sauce should be thick and rich.

Step 4: The Rest Remove from heat. Let it rest for 10 minutes with the lid slightly ajar to let the flavors settle. Serve hot with bread or dumplings.

Chef’s Note: "This recipe relies on the 'low and slow' power of cast iron. The pre-seasoned surface ensures the tomatoes and wine don't react with the metal, preserving the deep, rich color and flavor of the traditional paprika sauce."
